On this amazing foray into Chilean cuisine and wines, start in the modern capital of Santiago, home tosome of the world’s best food markets and top restaurants in South America. Journey deepinto wine country, Chile’s agricultural center, to get a handle on its roots.After, spend time in the pristine Lake District on a luxurious working farm for a true farm-to-table experience. Meet food artisans, farmers, winegrowersas you explore this diverse and enchanting culinary landscape. Day 1: Arrival in Santiago Afteryour overnight flight, meet your driver for private transfer into Santiago. Arrive at your hotel and the rest of the day is yours to explore. In the evening, meet the rest of the group for a welcome dinner near the Andean foothills at one of the city’s premier dining experiences housed in a cozy, intimate space. The menu is all about small wine producers and locavore cuisine. Welcome to Chile! (The Singular Santiago) Day 2: Santiago Markets Start the day with a lesson in what Chileans eat at La Vega, a wholesale market dating back to the late 1800s.Here, vendors hawk the freshest seasonal produce. Stop to taste someChilean classics made from scratch and seasonal treats. After, cross the river to the fish market where seafood turns over at the speed of light. Lunch is at an outstanding farm-to-table restaurant manned by a passionate young chef. The special menu is paired with wines from the MOVI (Garage wine movement) in Chile. (The Singular Santiago) Day 3: Casablanca Valley &Valparaíso This morning head to the Casablanca Valley, now a reference for cooler varietal wines. Check out a petit project known for their fresh, easy-drinking Sauvignon Blanc, Pinot Noir, and Syrah. After, visit a friend dedicated to the art of sublime Sauvignon Blanc, with views from his scenic terrace. Continue to land’s end in Valparaíso, now a culinary destination in Chile. Lunch at a trattoria where the focus is on local seafood, paired with a selection of coastal boutique wines from Liz’s cellar. Later, ride the city’s emblematic funiculars during a walking tour of the city. Visit an old-fashioned candy maker and bakeries making the baguette-like pan batido. Return to Santiago in the early evening. (The Singular Santiago) Day 4: Maipo Valley to Millahue Drive an hour south to the Maipo Valley and visit a project in the foothills producing elegant red blends. After visiting the vineyards, sit down to a private Chilean barbeque paired with their wines. Next, get acquainted withChile’s pioneer organic and biodynamic wine project that cultivates its grapes in harmony with nature. Journey south into the countryside, and arrive at your hotel in the Millahue Valley, part of one of the most significant wine projects in the world. Tonight, meet for a special welcome dinner where the resident chef pairs his fresh, simple cuisine with the complex house red. Heaven. (Vik Millahue) Day 5: Millahue Valley This morning, take a driving tour of the vineyards before visiting the winery utilizing alternative energy, followed by a professional style tasting of the different lots that go into their blend. Lunch back at the hotel and the afternoon is free to enjoy activities. Tonight, join the chef for a cooking class on regional cuisine and learn the secret of making a perfect empanada. (Vik Millahue) Day 6: Chilean Lake District Return to the Santiago airport for a short flight to the southern Lake District withrolling green pastures, native forests, snow-capped volcanoes,and quaint towns. Transfer to Hacienda Hotel Vira Vira a working farm set on acres of lush native forest complete with a babbling river.Check into your spacious suite featuring a wood burning fireplace and private outdoor Jacuzzi. In the evening, gather for a welcome dinner with a tasting of southern Chile’s best Pinot Noir and Chardonnay from the nearby Malleco Valley.(Hotel Hacienda Vira Vira) Day 7: Chilean Lake District Spend the morning visiting the working farm with the owner. See theorganic garden and dairy, as well as turkeys, wild boars, chickens, and cows. After, head out on one of the guided excursions: horseback riding,trekking in the ancient Araucaria tree forests, kayaking on the lake, soaking in nearby thermal baths, or meeting with local Mapuche weavers. Return to Vira Vira in the evening for a private group cooking lesson on Mapuche ancestral cuisine followed by dinner together. (Hotel Hacienda Vira Vira) Day 8: Chilean Lake District Today is yours to set off onexcursions at Vira Vira. Join together for our final meal tonight with a traditional Patagonian lamb barbecue.
